Recipe: Mushrooms chopped - 250 gm Onion chopped - 1 big Tomato chopped - 1 big Oil - 2 tsp Fennel seeds/cumin seeds - 1 tsp Ginger garlic paste - 2 tsp Chilly powder - 1 tsp Turmeric powder - 1/4 tsp Coriander powder - 1/2 tsp Garam masala - 1/2 tsp Curry leaves and coriander leaves 1. Layer in a 2 or 3L pressure cooker. 2 tsp oil + 3 tsp water. Add fennel for SI and cumin for NI. 2. Then spread chopped onions. Some chopped garlic for SI. 3. Chopped tomatoes. 4. Then a layer of mushrooms mixed with gg paste and all spice powders and salt. Skip gg and replace all spice powders with sambar powder for SI version. 5. Add some curry leaves and close the cooker, keep on medium flame for 3 whistles. 6. Open, mix in a tbsp of cream and some water, simmer for creamy NI version. Use as is for South Indian or can add coconut milk too. No sautéing! Do try and let me know how it turned out.
